Grapes were selectively handpicked into 20 kg harvest boxes and transported to a refrigerated chamber in the winery. e wine was made by gentle whole bunch pressing and a totally natural clarication giving the wine a real purity of fruit and absence of harsh phenolic compounds.e juice was slowly fermented, at 12 oC.
